Oxtail Soup ~ Beef Tail Soup

A soup that not only keeps your tummy adequately full, but also satiates your hunger pangs. My son was cured of his stubborn cough and cold thanks to this brew...




Ingredients:
Oxtail / Beef Tail – 250gms de-boned, trimmed off the excess fat and cut into chunks.
Onion – 1 large finely chopped
Carrots – 100gms chopped
Potatoes – 100gms diced
Coriander Leaves – 4tbs and some to sprinkle
Mint leaves – 1tbs
Bay leaf – 2
Cinnamon – 1stick
Cloves – 2-3
Green Cardamom – 2
Peppercorns – 10-12
Crushed Garlic – 4-5 pods
Ginger – 1 inch cut into thin strips
Salt to taste
White pepper powder - optional

Sauté the onions till transparent pink, add in the ginger and garlic and sauté again for 2-3 minutes. Add in all the spices, the bay leaf, cinnamon, cloves, peppercorns, cardamom, salt and sauté till a fragrant aroma is released. Add in the cut beef pieces and about 4 cups of water and pressure cook for about an hour. In the meantime cook the carrot and potato till tender in seasoned water. Check in on the beef after 40 minutes, add in the chopped coriander and mint leaves and continue to simmer for another 10 minutes. The broth would be oily and slightly gelatinous in its consistency. Strain the liquid into a large bowl. Using a slotted spoon, scoop out the beef pieces and shred it finely. Into the strained broth add the shredded beef and the boiled vegetables. Sprinkle in some freshly chopped cilantro and a dash of white pepper powder. It’s ready to be served warm with some buttered toast.

  1. Oh sounds new....I wasn't aware that oxtail is of some use in recipes. Nice remedy for cough & cold :).

  3. Oh my, it's been years since I relished this; grandma used to make me especially every week, back in India, this soup is known to cure asthmetic problems too :)

    here, we have to order a week before to get the tail piece :)
