My husband does not like Paneer at all, but I fished this recipe out from a Prevention magazine, and wanted to try it. I never told him the filling was Paneer based. I just told him it was a veg wrap, he simply gobbled it down without a word. It was a hit I guess!
Ingredients:
Tortillas/ Rotis - 6Paneer - 200gms crumbled
Processed Cheese - 2 cubes crumbled
Raw Vegetables - 1/2 cup of carrots, cucumber, bell peppers
Spring onion - 3tbs finely chopped
Balsamic Vinegar - 4tbs
Sugar - 1tsp
White pepper - a pinch
Salt to taste
Salsa
Grate a carrot and cucumber and keep aside. Dice yellow and red bell peppers. Into a large bowl mix the paneer and cheese together. Then into a pan, put in the sugar and balsamic vinegar and bring to a light simmer. Sprinkle in some pepper and pour over the crumbled paneer. Toss in the diced and grated vegetables with the spring onion. Add salt for seasoning. Give it all a good mix. Place the filling into each tortilla/ roti roll and seam down. Place into a baking tray and bake for about 10minutes at 100 C till the top of the tortilla turns a golden brown. Top with salsa and serve.
I love anything with Paneer, looks great with colourful vegetables in the sweet & sour flavour!!!!
