A recipe from Ramani Aunty's collection of Saute's. This was the only recipe left for me to try from that series.
Raw Papaya - 500gms de-seeded and cut into fingers
Turmeric Powder - 1/4tsp
Green chillies - 2 finely chopped
Garlic - 3 pods finely sliced
Shallots - 10-15 finely sliced
Mustard seeds - 1/2tsp
Curry leaves - a sprig
Salt to taste
Into a frying pan, splutter the mustard seeds and then add the curry leaves. Add the shallots, garlic and green chillies and saute till the shallots have turned colour. Tip in the papaya, turmeric powder and salt, cover and cook on low flame for 5 minutes. Spoon in some water if the papaya dries out, and cook for another 2-3minutes till al-dente. Serve hot with rice.
