BBQ Pork

In the attempts of a fancy cooking, a game of the ongoing matches, with a little bit of my son's monkeying around, dinner was all set with Barbecued Pork, french fries, to go with some buttered-parsley bread...a hefty meal for a hefty happy lot....

Ketchup - 2tbs
Coarse ground or dijon mustard - 1tbs
Honey -2tsp
Olive oil - 1tsp
Soya Sauce - 1tsp
Balsamic Vinegar - 1/2tsp
Salt to taste
Freshly ground black pepper
Pork ribs - 4 bone-in, 3/4inch (this can be substituted with lamb chops)

Combine all the ingredients except the pork/lamb in a small bowl and beat with fork to make the barbecue sauce. Heat a large skillet over high heat. Spray pan with oil and brown chops for 4minutes on each side. Reduce heat to medium. Coat tops and sides of the port/lamb with the barbecue sauce, turn and coat the other side. Cook for another 2minutes, turning once.
