Sausage filled Capsicum

An easy dinner for the day, and I tell you it wasn't enough for my little fellow and my husband, so be sure to make some more while your doing the same for your friends or family, they just may like it a bit too much...

[Serves - 4]
Red Capsicum - 4
Sausage Filling
Vegetable Oil - 1tsp
Onion - 1 chopped
Garlic - 2plum cloves chopped
Beef Sausages - 250gms cooked and chopped
Ground Coriander - 2tsps
Tomatoes - 300gms - chopped
Tomato paste - 2tsps
Ground Cumin  2tsp
Cream - 1cup
Rice Cooked - 1cup
Salt to taste

Cut the tops from capsicums and remove the seeds and membranes. Set aside. To make the filling, heat oil in a frying pan, saute the onion and garlic for about 4-minutes till onions are soft. Add the tomatoes and cook till the tomatoes are softened. Add the ground powders, tomato paste and sausages and cook on medium fire for about 3-4minutes. Add in the cream and let the mixture reduce to thicken. Stir in the rice into the tomato mixture and spoon the filling into the capsicum shells. Place the filled shells into a greased baking dish and bake for 25minutes at 140C. Once out of the oven, grate some Parmesan cheese over. Serve warm.

Tip: For a vegetarian option the sausages can be substituted with 400gms of cooked kidney beans. Or for better variety both the kidney beans and sausages could be mixed.
