A Sweet Punch~ Apricots, Figs and Cheese Pizza

This month's challenge is to make your own pizza, with a choice of your own topping. Since we were on an overdose of meat consumption, I resorted to a weird combination of topping - Stewed Apricots and Figs, with the saltiness of the sprinkled mozzarella on my sweet pizza. I'm not happy at the way my crust turned out, but my topping made up for it - maybe a little too sweet!! (wink, wink)

All donned before it got baked!
Ingredients:
FOR THE CRUST (MAKES TWO CRUSTS)
Active Dry Or Instant Yeast - 1 tsp 
All-purpose Flour - 4cups 
Salt - 1tsp 
Extra Virgin Olive Oil - 1/3cup 

Sprinkle yeast over 1 1/2 cups warm (not lukewarm) water. In a mixer, combine flour and salt. With the mixer running on low speed (with paddle attachment), drizzle in olive oil until combined with flour. Next, pour in yeast/water mixture and mix until just combined. Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and store in the fridge until you need it. 
Onto a pizza pan, stretch the dough to cover the pan, add the choice of topping and bake for 10-15minutes till the cheese is melted and the crust has turned golden brown.

Tip: It’s best to make the dough at least 24 hours in advance, and 3 or 4 days is even better.

For the topping
Stewed Apricots and Figs - 1cup (the stewed fruits I used were chopped roughly)
Honey - 3tbs
Orange marmalade - 2tsp
Lime Juice - Half a lime
Mozzarella cheese

Mix the orange marmalade, lime juice and honey well and coat the pizza with the glaze, then top the stewed apricots and figs, grate some mozzarella cheese for the saltiness to cut the sweetness.

To stew the Apricots and Figs
Whole Figs - 1/2cup
Whole Apricots - 1/2cup
Water - 3/4cup
Sugar - 1tsp
Lemon Juice - 1tbs

Into a pan, place the water, sugar and lemon juice and bring to a gentle boil. Add the apricots and figs and cover for about 20minutes on low flame. Sprinkle some cinnamon powder if required.
This can be served with a sponge cake, ice cream or even good yogurt as a dessert any day.
