Chorizo and Cheese Quesadillas

At Goa, I remember eating goan sausages with some pan roasted potatoes. Ever since, its been on my mind to use these Indian Chorizos. The recipe I had for a quesadilla seemed just do it all...loved it. Just wish
I wasn't lazy to make the guacamole, but did have some preserved salsa to pair with. All in all a nice meal.


Ingredients:
Mozzarella Cheese - 115gms grated
Cheddar Cheese - 115gms grated
Chorizo (Or Goan Sausages) - 225gms cooked (outer casing removed), or ham diced
Green chillies - 2 de-seeded and finely chopped
Spring onions - 4 finely chopped
Salt and pepper
Flour Tortillas - 8
Guacamole and Salsa to serve


Place the cheese, sausages, spring onions, chillies, salt and pepper to taste in a bowl and mix together. Divide the mixture between the tortillas. Fold the tortillas in half. Brush a large non-stick pan with oil and heat over medium heat for over 4-5minutes until the underside is crisp and lightly browned. Cut each tortilla into a quarter and serve accompanied with guacamole and salsa.

Chicken Satay Sandwich for the Quick Breakfast!

Left over dinner of yesterday was Chicken satay. I always get up late, in spite of the alarm ringing, I turn it on snooze and cozily snooze till there's an hour left for everything to get done. The next you know, I'm worked up and already tearing my hair apart. I wish I could get up earlier everyday - "still remains one till date..." Never the less, I quickly got the chicken and the peanut sauce from the fridge, warmed it up and put it between two slices of bread. It pretty much worked fine with me to go along with my cup of 'tangerine tea' - courtesy teena who got me, quarter of a bag of dried tangerines from Mongolia.




Ingredients:
Chicken Breats - 750gms
Brown sugar - 2tsp
Lemon juice - tsp
Grated garlic - 1tsp
Grated fresh ginger - 1tsp
Salt to taste

Satay Sauce
Crunchy peanut butter - 4tbs
Soy Sauce - 1tbs
Honey - 1tbs
Grated ginger - 1tsp
Grated garlic - 1tsp
Onion - 1 small chopped

Using a sharp knife, cut the chicken into cubes and marinate the chicken with brown sugar, lime juice, grated ginger and garlic. Season the chicken with salt. Stash into the refrigerator for about half hour to one hour. Skewer the chicken using the wooden skwers. Onto a hot pan, drizzle in some olive oil/ any vegetable oil and griddle the chicken. Pour some of the excess marinade on the chicken and cook till the chicken is done on both sides.
In the meantime into a small pan saute the onion till translucent. Then add in the grated ginger and garlic and continue to saute. Then add in the soy sauce, peanut butter, honey and about 4-5tbs of water to loosen the peanut butter and make it a thick sauce like consistency. Once done, remove and serve the sauce immediately with the griddled chicken. The dish will serve as a good appetizer or starter.
For the sandwich: Left over chicken breasts need to be taken off the skewer and chopped up roughly. Into the frying pan, drizzle in some oil. Mix in the chopped up chicken and leftover satay sauce and combine well over low heat. Place the filling between freshly toasted bread and enjoy for breakfast.

Baked Fries with Hot Dog~My Toddlers Fav!

My son loves sausages, he could have it everyday for every meal. And everyday by default the morning question as I pack his mid morning snack "Mama what have you put in my tiffin? Sausage??!!". If the answer is 'No' then, the tantrums follow, which is a usual scene here - especially when your in a frantic hurry. I'm giving into his needs of  making Hot dogs and some baked fries to accompany for dinner. The day I give him sausages you can hear him sing the song from Mickey Mouse Club House,

Baked Fries
Ingredients:
Potatoes - 500gms
Cayenne Powder - 1/4tsp
Olive Oil - 3-4tbs
Pepper - 1/2tsp
Salt  - 1tsp
Garlic minced - 6-7pods


Cut the potatoes into wedges and boil into a pan of water until almost done. Pat dry and keep aside.Into a bowl, combine pepper, salt and olive oil and the minced garlic. Toss the potatoes into the bowl coating it. Sprinkle in the cayenne powder and then again, toss the potatoes. Arrange the potatoes in a single layer into the prepared baking sheet. Bake into a preheated oven of 220C until the potatoes turn crispy golden brown.  That should take about 25-30minutes. The potatoes need to be turned once while baking.

Hot Dog Relish
Ingredients:
Ready made Horseradish Dressing - 1/2cup
Tomato ketchup - 3tbs
Yellow Mustard -3tbs
Worcestershire Sauce - 2tsp
Onion - 1 small finely chopped
Green Bell Pepper - half, finely chopped

Combine all the ingredients into a medium bowl and serve onto the hot-dog

Lunch with a Book and Chicken Sandwich

I just joined Just Books, I love books and love the smell of new books...it's  been on my mind to join a library and I did that....to satisfy my excitement of starting on my new book and to satisfy my hunger pangs...I got on to make something that's easier to manage, while reading my book so that  I don't have messy fingers flipping the pages. Had some boiled shredded chicken already in my fridge, an apple, light mayo....and potato chips....and some orange juice to wash it all down.


Ingredients:
[Serves 3]
Boiled chicken - whole boneless chicken shredded
Apple - 1 chopped finely
Onion - 1 medium chopped finely
Garlic - 2-3 grated
Light mayonnaise - 4tbs
Tobasco - a dash
Lettuce to pile your bread
Pepper and salt taste
Burger buns/ Brown bread/ Pita bread


Into a pan sauté the onions till pink. I sautéed the onions because none of us like the raw onion taste except in a raita. Add in the garlic and sauté in the pan for a minute. Combine all the ingredients into a bowl. You may use more mayo depending on one's taste. Serve onto a bed of lettuce as a salad, or pile your bread and lettuce for filling the sandwich.

Fried Cheese Sandwich


She is totally vivacious, boisterous and she's got a heart of gold. She also has a humour that would totally crack you up. When two women get together, especially if its someone you love...it could just mean only one thing....plain and pure "Gurl Fun". Thats what Jen did to me..she took a day off at work and we spent time together like there's no tomorrow. 
And for an evening snack we had some bread and cheese with a twist ..devoured it all...we needed more energy to continue our non-stop yapping and non-stop laughing.

Ingredients:
Brown bread - 10slices
Britannia Slimz Cheese Slices - 5
Gram flour - 125gms
Water to make the batter
Salt to taste

Sandwich each cheese slice between two slices of bread and halve them into triangles. Make a thick batter using the gram flour, salt and water. Dip each triangle, coat well with batter and deep fry till golden brown.

Brown and White Cucumber Sandwiches

A light snack to please anyone and satiate a 4'o clock hunger pang or even woo a guest for a nice tea party.


Ingredients:
Brown Bread - 1 loaf (at least a day old)
White Bread - 1 loaf (at least a day old)
Lebanese Cucumber - 6-7 cut into very fine roundrels.
Butter - 3tbs
Light Mayonnaise - 5-6tbs
Tobasco sauce - couple of dabs (depending on one's spice levels)

Into a mixing bowl, melt butter and mix in the mayonnaise and then dab in tobasco sauce. Spread the buttery spread onto one slice of brown bread, arrange the cucumber rounds and  cover white bread. Slice of all the edges and cut the sandwich into small rectangles or squares and arrange alternatively onto a large platter. Serve with some cherry tomatoes and ketchup.
